Pollen Nation Farm Chef and co-owner, Nathan Hornidge, has utmost respect for the natural environment and showcases his love for the quality wild ingredients found in Western Newfoundland with his careful consideration of the menus he creates. Ethically harvesting/ foraging traditional ingredients that have been used by the Indigenous people of this area for generations is one of the many ways he and co-owner Amanda Oake celebrate the land on which they live and work.
The culinary experiences offered at Pollen Nation Farm successfully evoke traditional recipes, and they help to bridge the gap for new culinary representations of these foods at events throughout Eastern Canada.
Through catering, operating a restaurant and café, and offering a farmer’s market, these regional culinary leaders use their popularity and success to expose locals and international tourists to the beauty of natural, wild, locally-sourced ingredients. Drawing food-seekers to their farm and associated events also grants them the opportunity to both celebrate the culinary bounty of this area, and educate the public about the history and integrity of the ingredients prepared for them by Chef Nathan.
Pollen Nation Farm is proud to be a part of the movement to increase the biodiversity on the island by protecting and celebrating the unique NL honeybee. Pollination is integral to a healthy Boreal environment, and honeybees are vitally important to agriculture and wild vegetation alike. Chef Nathan takes every opportunity to infuse his creations with the world class honey that is harvested from the bees at Pollen Nation Farm, infusing his creations with unique and rich flavours of wildflower and forest.
